Stewed in Oven Russian Borscht

Yes, stewed or baked. A little closer for ideal Russian cooking – in Russian Oven (Pechka).  Stewed borscht turns rich taste and color. Still can be meat or vegetarian versions. For this recipe large oven-proof pot needed, the best choice for Russian Oven was Russian Pot (chugunok), but I used my biggest cast iron pot. Large beans pot (ceramic or clay) works too. I tried new order of ingredients in borsht, recipe adapted from Russian Blog.

Grilled Polenta and Ratatoulle

I found very easy way to cook polenta – in the oven. Just mix it with water and bake. No stirring, just it. I cut cooled polenta in circles and grill it a little to add stripes. Serve with plain ratatouille  (recipe adapted from Food Network ) on top for meatless Monday dinner. For next day lunch I added chopped cooked sausage and sunny-side eggs on top – very great addition, I say.

Russian Farmer Cheese Cookies – Goose Feet

My favorite bake – all things with small curd cheese, like Russian tvorog, Italian ricotta or American farmer cheese. Fritters, muffins, cookies, pancakes and waffles – you named it. Ironically, there is no cheesecakes in my list. Maybe I didn’t eat Right One, I don’t know.

But I know for sure – I love these cookies from my childhood oh-so-very-much. It’s very simple dough with sugar sprinkles inside and outside. In original recipe tvorog and margarin as in equal parts, but I made my cookies with less fat.

Cookie’s’ shapes are triangles and cut from fork makes it looks like goose foot or little shells, some call it roses.
