Russian Yeast Pie with Plums, Pudding and Chai Spice

Still too much fresh fruits in my hands after great pick-up at Och’s Orchards. And now, one more bake – Real Plum and Pudding Pie! Funny name, I know, looks familiar, but has nothing with famous Christmas dessert. My pie, or, pirog in Russian – yeast dough with semolina flour addition and chai spice, with sweet creamy pudding and sweet-n-sour plums on top. Oh, and easy-to-cut for portions design. My yeast dough pies, usually, a little dry or bread-y, because I don’t use any butter in it, but it’s still very good with cup of black tea. For more pastry taste, just add melted butter, about 4 tbsp. in liquid part of dough.

Fragrant and sweet yeast pie with raspberry filling, which we picked-up today at Och’s Orchards. Russian pies made with fluffy crust with open face, lattice top or cover with another crust. Fillings can be sweet or savory.

Russian Stuffed Cabbage Rolls – Golubtsy

Golubtsy also known as stuffed cabbage rolls, still very popular Russian and Ukrainian dish. My family loves it. So sometimes I made “lazy” version of it – lenivie golubtsy, or stuffed peppers and collard greens.

This is all-in-one dish – meat, grains and vegetables. There are many variations of recipe. Some use ground beef or pork, but chicken or turkey works too. Mostly used grain is rice, but buckwheat or millet can be used. Some adds sautéed carrot and onion mix into stuffing, some put it just into sauce.  There are vegetarian version with rice and vegetables/beans or with mashed potatoes.

There are many ways to roll golubtsy – like envelope or like cornet. Natasha’s Kitchen has great instruction and recipes. Today I made cornet-shape golubtsy.

Golubtsy can be easily frozen before or after cooking, with or without sauce in foil pans.

Papaya and Mango Sauce

Very good addition for morning food – pancakes, waffles or toasts. Great on top of cottage cheese or fruit salads. With some yogurt or milk, makes great smoothie. Can be used in layered cakes for filling.  Frozen, make great fruit pops. With garlic, ginger and some herbs additions make great fish sauce.

Plum Dumplings with Cinnamon Bread Crumbs

Big, juicy dumplings I made today. Recipe mixed from many variations of European dishes -  Hungarian, Polish, German… I used potato flakes for dough and big plums for filling. Steam my dumplings and cover it with sweetened and roasted bread crumbs. Not authentic, but so tasty. I made 20 dumplings and freeze half of it.
