Quinoa and Spinach Salad with Chick Peas and Fresh Apricots

One more salad with cooked quinoa, inspired by Runners world site. Kefir dressing is great idea for green salads (I just omit oil).

Quinoa and Spinach Salad with Chick Peas and Fresh Apricots

Yield: 2 servings

about 3/4 cup cooked quinoa
1 garlic clove, minced
1/2 tsp. ground cumin
1/2  tbsp. course-grain Dijon mustard
1/4 cup plain low-fat kefir
ground black pepper and salt
2 cups baby spinach, finely chopped
1 /2 cup chick peas, rinsed and drained
2 fresh apricots, diced
1/4 red onion, thin sliced
1/4 cup fresh cilantro

Make the dressing: mix together garlic, cumin, mustard, kefir, pepper, and salt. Combine spinach, chick peas,  apricots, onion, and cilantro in a large bowl. Add quinoa and the dressing. Toss to coat and serve.

1 serving is about 185 calories
