Homemade Skinless Turkey White Sausages

I had free turkey breast on my hands, so I made these white, juicy, tender sausages from half of meat. Recipe adapted from Monday Delights Blog (Russian). Also I made it with plastic food wrap film technique, like in my Homemade Skinless Turkey Mild Italian Sausage recipe.

Homemade Skinless Turkey White Sausages

Yield: 12 sausages

17.5 oz. white turkey meat
1/2 medium sweet onion
1/2 cup heavy cream or half-n-half
1/3 tsp. salt
1 tsp. herbs de Provence
4-6 cups chicken, turkey or vegetable broth or stock

Sauté onion over medium heat in preheated sprayed with cooking spray skilled until soft. Chop the turkey meat with blender with cream and onion, add salt and spices.

To test the seasoning, heat small skillet, and cook about teaspoon of the mixture. Adjust seasonings, to taste.

Cut the piece of plastic food wrap film length of 15 inches. Put the meat mixture into a pastry bag or Ziploc bag. Lay out flat sausage, an inch thick, cover with part of the food film and gently twist. Ties the ends. Repeat with all meat mixture.

Put sausages in the deep pan, fill it with broth, cover with foil and send in a preheated oven to 350 degrees for 15 minutes.

1 sausage is about 72 calories
