Russian Non-Yeast Fluffy Pancakes

Very fluffy pancakes, low in fat and sugar. Russian name – olad’i or oladushki. There are two secrets – heated base for dough and lid.

Yield 4 servings (5 pancakes in each)

1 cup Kefir or buttermilk
1/2 tsp. baking soda
1/2 tsp. baking powder
pinch of salt
1 tsp. sugar
1 large egg
1 cup all-purpose flour

Gently heat Kefir or buttermilk until warm, do not overheat, or it will curdle. Add sugar and salt. Add all soda and watch it foam. Add egg, flour and baking powder to make pancake batter. Drop batter in preheated, sprayed with cooking spray, pan, using about tablespoon with heap batter for each pancake.  I use my Norpro Cast Iron Plett Pan to make round shape pancakes. Cover pan with lid,  cook pancakes in medium heat until brown in one side, flip and cook in another side, uncovered, until brown. Serve hot.

1 serving is about 150 calories
1 pancake is about 30 calories
