Italian Leftover Beef Patties 2.0

We loved Italian Leftover Beef Patties – Polpette di bollito in first time, so I adapted Italian recipe and made new patties – with added potato and lemon rind.

Italian Leftover Beef Patties

Yield: 14 patties

12 oz. cooked (boiled, roasted or baked) round top beef, sliced in chunks
1 egg + 1/2 egg
1 cooked potato (I bake mine in microwave)
1/2 tsp. grated lemon rind
1 tbsp. chopped parsley
1/4 cup milk or
salt and pepper
2-3 tbsp. breadcrumbs (I omit this)

Cook potato – boil or bake it. If boiling, save about 1/4 cup potato water.
Cut meat into small pieces, grind in a blender with 1 egg, parsley, milk or potato water, add mashed potato, salt and pepper, mix well. Make 12-14 patties, dip each in egg and roll in breadcrumbs. Cook in preheated skilled, oiled or sprayed with cooking spray, in medium heat, about 3-4 minutes in both sides, until golden brown. Great hot and cold too.
