Yeast Ricotta Pancakes with Scallions

It’s Maslenitsa week in Russia, so I make crepes and pancakes. Goodbye Winter and hello Spring! Soft, fluffy and chewy pancakes with spring addition – green onion.

Yield: 16 pancakes

1/3 cup fat-free ricotta cheese
1 cup water
1 tbsp. olive oil
1 cup all-purpose flour
1/3 tsp. dry yeast
1/3 tsp. salt
pinch of sugar
1/2 cup scallions tops, chopped

Dissolve yeast in warm water, add ricotta, sugar, salt, oil, flour and knead the very soft dough. Cover and place in warm place until double in size (for about 1 hour). Carefully mix with chopped onion, let rest about 10 minutes more.

Spray a griddle or frying pan with cooking spray and heat over medium high heat.  Scoop the dough onto the griddle, using approximately 1 tablespoon with heap for each pancake. I used my Norpro Cast Iron Plett Pan to make it easy. Cook on both sides and serve hot.
