Spinach Dough Beef Pelmeni

Once I bought very special thing – freeze dried spinach. I used it in egg whites omelets and I got the idea – add it to the ravioli/pelmeni dough. So I replaced 1/4 cup of the flour with powder of dried spinach in my usual dough and got a bright green colored dough, flavored with spinach. I used it to make beef pelmeni. It was sure tasty, but looks a little dramatic. Update photo in july, 2013.

Spinach Dough Beef Pelmeni

Yield: 5 (12 pelmenis each) servings

For dough:

1 3/4 cups of all-purpose flour
1/4 cup dried spinach, powdered
1 large egg (or 2 oz. eggs substitute)
1/2 cup of water

For filling:

1 lb. ground beef (I used Laura’s  Low fat brand)
1/2 onion, diced
Salt, black pepper to taste

Spinach Dough Beef Pelmeni

Mix together egg, warm water and pinch of salt, add flour, mixed with spinach powder. Use dough hook on your stand mixer and knead smooth and elastic dough. Cover with plastic wrap and leave it to rest for 20 min.

Mix well ground beef, diced onion,  salt and pepper. Sometimes I add 1-2 tbsp.  dried chanterelle powder into filling.

Grease the surface with a oil spray or dust with some flour. Roll the dough into a long log and cut it into small pieces. Roll each piece into a 3-inch circle. Fill each circle of dough with about 1/3 tsp. of the filling. Fold circles with filling in half and pinch edges to seal very well, then bring two opposite corners together and pinch to seal. Repeat with remaining dough and filling.

I always freeze pelmeni before cooking, this prevent it from deforming or breaking. Just lay the uncooked pelmeni on a tray (floured or greased with oil spray), make sure that they don’t touch each other and put tray in freezer for at least half an hour.

When ready to cook, place pelmeni into a large amount of boiled salted water and cook until they float to the surface and water start to boil again – about 4-5 minutes. Carefully stir pelmeni with spoon to prevent them from sticking together and to the bottom.

Serve pelmeni hot with sour cream or melted butter.
