King Oyster Mushrooms in Pineapple Sauce

Strange combination for me, but it’s works really good. Mushrooms and pineapples, great like side dish or burger topping. Adapted from great Pham Fatale blog.

King Oyster Mushrooms in Pineapple Sauce

Yield 3 servings

1/2 sweet onion, thinly sliced
4 King oyster mushrooms (about 6 oz.)
3 garlic cloves. minced
2 tbsp. fresh ginger root, grated
1 cup fresh or frozen pineapple, crushed
3 tbsp. soy sauce
2 tsp. sugar
salt and pepper

Cut the mushrooms into thick slices.

Heat a wok, spray with cooking spray. Add onion and cook until golden. Add the mushrooms, cook for about 2-3 minutes. Transfer to bowl.

Add the garlic and ginger into wok. Cook until fragran, add the crushed pineapple, sugar and soy sauce. Return the King mushrooms to the wok. Stir constantly until the sauce is absorbed by the mushrooms.

1 serving is about 93 calories
