Fast Salted Lemons with Garlic and Parsley

Great recipe and new taste for us. I found it in Russian blog Ranja from Norway. So recipe is Norwegian, it’s easy, fresh and tasty.

Fast Salted Lemons with Garlic and Parsley

1 lemon
1/4 cup chopped parsley
3 cloves of garlic, chopped
salt and pepper
olive oil

Thinly slice lemons, discard any seeds.

In the jar put layers of lemons, parsley, garlic, salt and pepper.
Pour olive oil so lemons are covered. I omit this step.

Cover and refrigerate, it’s ready on the next day.

Author recommend to eat lemons in salad: parsley, green onion, red onion and lemons. Great with shrimps.
