Easy and fast lunch salad for one.

Chickpeas, Roasted Pepper and Spinach Salad

Yield: 1 serving

1 cup canned chickpeas
1/2 roasted pepper
1 cup baby spinach
1 tsp. balsamic vinegar
salt and pepper

Drain and rinse the chickpeas, put into a bowl with the chopped pepper and spinach. Drizzle balsamic vinegar on top.

1 serving is about 235 calories
