Yeast Braid with Apple-Ginger Filling

Great coffee cake, will be awesome with some white glaze on top. Not very sweet, but tasty and fragrant.

Yield: 10 servings

Filling*
2 apples, peeled and diced
2 tbsp. white sugar
1 1/2 tsp. cinnamon
3 pieces crystallized candied ginger

Dough:
2 cups bread or all-purpose flour
1 tbsp. sugar
1 tsp. dry yeast
1/2 tsp. salt
1 cup warm milk
1 tbs. butter

*I used my pre-made apple filling and chopped ginger

In the bowl of a stand mixer, mix yeast and cup of warm milk. Add the flour and salt, mix well, add softened butter and knead until the dough is smooth and elastic. Cover and let rise for an hour.

For filling: mix apples with sugar and cinnamon and cook in heavy pot about 15 minutes. Mix with chopped candied ginger.

Punch down the dough, roll it out into a rectangle. Mentally divided into three parts. Cut 1-inch strips on the left and right sides, leaving the middle third uncut.

Place the apples in the center, and then fold the strips down the center, overlapping each previous strip. Cover and let rise about 30 minutes.

Bake at preheated (350 F) oven for 25 minutes, or until the braid is a golden brown.

1 serving is about 140 calories
