Cranberry and Cream of the Wheat Mousse

This old Russian dessert, made with mannaya krupa, manka – farina or semolina, or, in my way, with cream of the wheat. Can be made with any berries, but most often – with cranberries.

Cranberry and Cream of the Wheat Mousse

Yield: 2 servings

1 cup fresh cranberries
4 tbsp. sugar (or more to taste)
1 packet (45 g) cream of the wheat
1 1/2 cups water

In a saucepan bring to a boil water and sugar, stirring to dissolve sugar. Add cranberries, return to a boil. Reduce heat, simmer for 10 minutes or until cranberries burst. Put the hot cranberry juice through a fine sieve to get rid of berry skins.

Bring cranberry juice to boil add cream of the wheat, while stirring. Cook until it thickens. Leave to cool at room temperature.

Beat the cooled mousse with a mixer until pale and fluffy.

1 serving is about 100 calories
