Shaved Brussels Sprouts with Apples, Bacon and Cranberries

Yield: 2 servings

1 pound Brussels sprouts, trimmed and thinly sliced
1 slice bacon, chopped
1/4 cup dried cranberries
1/4 apple, chopped
salt and pepper to taste

Fry bacon in a large deep skillet over medium heat until browned and crisp, 2-3 minutes. Remove bacon with a slotted spoon and set aside on paper towels.

Add the Brussels sprouts and apples. Cook, stirring frequently, until sprouts are wilted. Remove from the heat, stir in the bacon and cranberries and season to taste with salt and pepper.
