Grape, Fennel and Celery Salad

Fresh and crisp salad with sweet side. Adapted from Eating Well.

Yield: 2 servings

1 medium fennel bulb, halved, cored and thinly sliced
1-2 celery sticks, chopped
1/2 cup red seedless grapes, halved
3-4 sprigs scallions, chopped
1 tbsp. lime juice
1/2 tsp. olive oil
salt and pepper

Mix olive oil and lemon juice. Add grapes, fennel, celery and scallions; toss to coat.
