Tuna Loaded Baked Sweet Potato

Great lunch meal – fast, easy, healthy and, oh, so delicious. I adapted BBC Good Food recipe and added just touch of mustard, I love my sweet potato with mustard, you know.

Yield: 1 serving

1 sweet potato, dark orange, 5″
1 container (3 oz.) tuna in water, chunk, drain
1/4 red onion, sliced
1 tbsp. lime or lemon juice
2 tbsp. Greek yogurt (I used sour cream)
black pepper
parsley leaves

Scrub the sweet potatoes and poke all over with a fork. Place on a microwaveable plate and cook on High for 6-7 minutes or until tender. Split in half and place each one, cut-side up, on a serving plate.

Flake the drained tuna with a fork and divide between the sweet potatoes. Top with the red onion, squeeze over the lime/lemon juice, sprinkle with black pepper. Make some mustard dots, here and there.

Top with a dollop of yogurt or sour cream and add some parsley leaves, to serve.

1 serving is about 260 calories
