Leftover Turkey Chili

FrankenStorm Sandy still going on, so we need some comfort food to comfort ourselves. Like this leftover turkey (cooked thighs) chili with black beans and corn. Adapted from Simply Recipes

Yield: 3 servings

1/2 medium onion, chopped
4 garlic clove, chopped
1 small green pepper, chopped
1/2 cup corn kernel, drained
1/2 cup black beans, drained
4 tbsp. tomato paste
1 cup turkey stock
1 tbsp. chili powder
1 tsp. ground cumin
1 tsp. dried oregano
salt and pepper
2 cups cooked turkey meat, chopped
2 tbsp. cheddar cheese, shredded
4 tbsp. Greek yogurt

In a large pot, sprayed with cooking spray, cook the onion and green pepper over medium high heat, stirring, about 5 minutes. Add the garlic, chili powder, cumin and cook, stirring, for a minute more.

Add tomato paste with stock, beans, corn, oregano, salt, pepper, and cooked turkey meat. Bring mixture to a simmer and reduce heat to low. Simmer, uncovered, for about half hour.

Salt to taste. Serve with shredded cheddar cheese and Greek yogurt.
