Potato Hush Breakfast Pizza

Not a real pizza, but potato pie was our breakfast today. All breakfast goodies – potato, bacon, spinach. cheese and eggs – in one bowl. Add toast and complete it.


Yield: 2 serving

5 large eggs
2 tbsp. sour cream (I found this tip in Germany site)
1 russet potato + 1 sweet potato, grated
OR 20 oz. refrigerated hash brown potatoes, well drained
3 thin slice cheddar or mozzarella cheese
1 cup baby spinach
2 tbsp. bacon bites

Preheat oven to 425 degrees.

Spray pan with cooking spray. Combine 1 egg, sour cream and pinch of salt in a medium bowl and beat until foamy. Stir in potatoes and mix well to coat. Press into prepared pan to form a crust. Bake for 15-25 minutes or until potatoes are lightly browned.

Put spinach and bacon bites on crust, cover with cheese slices. Carefully slip eggs onto the pizza one by one. Add some salt and pepper. Bake for 5 to 7 minutes or until the whites and yolk are just set.

1 serving is about 350 calories
