Oatmeal Banana Drop Cookies

Plain bake for cold and windy day or for use-ripe-banana day. Was good itself but sure will be better with some chopped walnuts (but it adds calories). Small batch – only 8 cookies.

Yield: 8 cookies

1 very ripe banana
1 large egg
1 tbsp. (coconut) spread or unsalted butter*
1/4 cup sugar
1/2 cup quick oatmeal
1/2 cup flour
1/2 tsp. baking powder
1/2 tsp. ground cinnamon
*add pinch of salt if use butter
1 tsp. pearl sugar (optional)

Preheat oven in 350F.

Mix well spread and sugar, add egg and mashed banana. In small bowl mix flour with cinnamon and baking powder. Add the liquid ingredients to the dry ones and mix only to combine.

Drop by tablespoonful 2 inches apart (I used my Norpro Stainless Steel Scoop) onto prepared cookie sheet. Bake 12 to 15 minutes or until golden.

1 cookie (with coconut spread and pearl sugar) is about 99 calories
