White Fish in Pancake Batter

This recipe I got from Luyba – my friend from Estonia. Fish tastes great the next day too. Any kind of white fish can be used.

White Fish in Pancake Batter

Yield: 4 servings

2 lb. white fish fillet (tilapia, flounder, cod)
1/2 tsp. salt
1/2 tsp. sugar
1/2 lemon, juiced
black pepper
1/4 cup chopped parsley (optional)

1 cup flour
2 eggs, divided
1/2 cup milk
1/2 tsp. baking powder

White Fish in Pancake Batter

Prepare the marinade: mix together salt, sugar, black pepper and lemon juice.

Put pieces of fish in a bowl, pour marinade on top, add chopped parsley. Marinade 1/2 – 3 hours in cool place, covered.

Prepare the batter: beat 2 egg yolks with sugar and salt, add milk and flour, mixed with baking powder. Whip the whites (drip a few drops of lemon juice or a pinch of salt) and carefully add in the batter.

Dip fish in batter and fry in preheated vegetable oil (or in just sprayed with cooking spray skillet) over medium heat until brown in both sides.

1 serving is about 316 calories
