Purslane Tzatziki–Yogurt Dip

Purslane is green leaf vegetable, tastes like spinach, great in green salads or with yogurt dressing, like this tzatziki recipe.

Yield: 2 servings

1 container (150g) Greek yogurt (I used Oikos plain, fat free)
1/4 cup cucumber,  diced
1/4 cup purslane, chopped
1 garlic clove
1 tsp. lemon juice
1 tbsp. olive oil
salt and pepper

Combine olive oil, lemon juice, garlic, salt, and pepper in a small bowl. Add yogurt, cucumbers and purslane. Chill for at least hour  before serving.

1 serving is about 100 calories
