Mushroom Stuffed Chicken Patties (Zrazy) and Dijon-Orange Mashed Sweet Potato
Ground chicken and mushroom stuffing made great patties (Russian name is Zrazy), go great with mashed sweet potato with Dijon mustard and orange kick, recipe adapted from Confreda.

Yield: 6-8 patties
1 lb. chicken bone-less meat or ground chicken (breast only is ok, but mixed is better)
2 large Portobello mushrooms (or 5-6 white mushrooms)
1/2 medium onion
1 large egg
salt and pepper
Cook chopped onion and mushrooms in skilled with some oil or cooking spray until done, add salt and pepper to taste. Set aside.
Mince chicken meat, mix well with egg and seasoning. Divide the ground chicken into 6-8 balls. Take the ball on a wet or oiled palm, flatten with the other hand, place 1 tablespoon filling and fold the cake in half. Press gently to shape a “boat” or oval. Repeat with the rest of ground chicken and stuffing.
Cook patties in a big skillet until browned in both sides.

Dijon-orange Mashed Potato:
Yield: 3 servings
3 large sweet potatoes, peeled and cubed
1 tbsp. Dijon mustard
1/4 cup orange juice (I used Tropico 50% Less Sugar)
salt and pepper
parsley for garnish
Place potato in a saucepan, and cover with water. Bring to a boil. Reduce heat; simmer 15 minutes or until tender.
Drain and return potato to pan. Add orange juice to potatoes and mash with potato masher. Add Dijon mustard and salt and continue mashing to combine. Serve hot, garnish with chopped parsley.
