Egg Whites and Banana Pancakes

It’s something between pancakes and omelets. No sugar – all sweets is from banana. Fluffy and easy to make, just three ingredients at all.

Yield: 6 pancakes

2 egg whites (I used All-whites brand, one cap of liquid egg whites)
1 medium ripe banana, mashed
1/4 cup all-purpose flour

Whisk egg whites until soft peaks, add mashed banana and whip until smooth, carefully add flour, mix together.

Bake pancakes (1/4 cup batter for each) on preheated pancake pan, sprayed with cooking spray. Very good with blueberries too.

Serve hot with some maple syrup or honey.

1 pancake is about 43 calories
