Bacon, Garlic and Herb Coleslaw with Hot Dressing

Salad with smoked, sweet-n-sour taste, crunchy and fragrant, low in calories. Inspired by MyRecipes.

Yield: 4 servings

3 cups cabbage, thinly sliced
1/2 small Vidalia or sweet onion, thinly sliced
1 large carrot, shredded
1 garlic clove, minced
1/2 cups flat-leaf parsley leaves
2 tbsp. fresh oregano leaves
2 tbsp. cooked bacon pieces

1 tsp. Dijon mustard
1 tsp. honey
2 tbsp. apple cider vinegar
1 tbsp. olive oil
salt and pepper

Combine cabbage, onion, carrot, garlic, bacon and herbs in a large bowl. Set aside.

In small saucepan combine mustard, honey, vinegar, oil, salt, and pepper. Heat, stirring, until salt dissolve, do not boil. Pour hot dressing over vegetables and bacon and toss to coat. Let cool or serve warm.

1 serving is about 85 calories
