Russian Gluten Free Lemon Bars or Snowflake Cake

It was a old Russian cake recipe (named Snowflake cakeKeks Snejinka in Russian), but I used less of main ingredient – sweetened condensed milk – and had a 6 great lemon bars. It’s tastes like (cream)cheese bars, but it has no any cheese. Also, it’s gluten free and easy to make.

Yield: 6 servings (my pan 6 1/2 inches)

1 large egg
1/3 cup sweetened condensed milk (I used Eagle brand, fat free)
zest and juice from 1 medium lemon
1/2 tsp. baking soda
6 tbsp. corn starch or potato (mostly used in Russia) starch

Preheat oven for 350F.

Combine egg, condensed milk and lemon juice and zest, mix well about minute. Mix starch and (gluten-free) baking powder, sift through a sieve into milk-egg mixture.

Pour batter into prepared pan, bake until done, about 25 minutes. Do not overbake, like I do.

1 serving equals 95 calories

For cake Snowflake – use whole can of condescend milk with same ingredients.
