Purslane and Tomato Salad

Purslane is leaf vegetable, great alternative for lettuce or spinach in salads. I bought my purslane in farm market. This is plain, but tasty tomato salad.

Purslane and Tomato Salad

Yield: 2 servings

2 cups purslane, roughly chopped
2 big tomato, sliced
1 tsp. grain Dijon mustard
1 tbsp. lemon juice
salt and pepper

Toss the purslane and tomato with the Dijon mustard and lemon juice in a salad bowl, add salt and pepper for taste, serve.

1 serving is about 30 calories
