Pickled Garlic Scapes

Garlic scapes or flower stalks are crunchy and great for cooking. In Russia we made pickled garlic scapes, it reminds pickled wild leek or ramson (cheremsha in Russian). Sweet-n-sour, garlicky taste, made a nice appetizer or addition for stewed meat. I found garlic scapes in local farmer market and in HMart.

Pickled Garlic Scapes

2 medium bunch of garlic scapes, cut flower head, cut in smaller pieces if needed
For marinade:
4 cups of water
4 tbsp. white vinegar
2 tbsp. sugar
3 tbsp. kosher salt

Put garlic scapes into jars, add boiled water, let stay 10 minutes, rinse, pour hot marinade, close with lids and let cool. If you want to make a preserve – sterilize jars and lids. It’s ready the next day.

For marinade: bring to boil 4 cups of water, add salt and sugar, mix to dissolve, remove from heat, add vinegar.
