Banana Muffin Donuts
Bananas for us mean bread or buns, even pancakes, but not raw. Today I used two great ripen bananas for light and easy muffins in donut shapes (or donuts with muffin batter). Great for breakfast - not too sweet, not too fat. Adapted from Cat Can Cook blog.

Yield: 10 servings
2 large bananas, mashed
2 tbsp. white sugar
1 large egg, slightly beaten
2 tbsp. butter, melted
1/2 teaspoon baking soda
1/2 teaspoon baking powder
pinch of salt
3/4 cups flour
Preheat oven in 350F.
Stir butter and sugar, add egg, mashed banana and mix well. In a separate bowl, mix together baking soda, baking powder, salt and flour. Mix wet and dry ingredients just until smooth (do not over mix).
Pour into greased muffin/donut pan, and bake about 20 minutes (look at bottom crust, it needs to be brown).
