Yogurt and Bananas Pancakes

Not very sweet, but fragrant mini banana pancakes (Russian Bananas Oladyi). Bananas – the first exotic fruit, which became familiar to most of Soviet children. Bananas were always sold unripe (green), we waited patiently… It was very rare that bananas were too ripe, but they made great pancakes.

Yield: 3 servings (5 pancakes each)

1 medium ripe banana
1/4 cup plain yogurt (I used Kefir)
1/4 cup milk
1/2 tsp. soda
2 eggs (I used Better-n-Egg)
2/3 cup all-purpose flour
pinch of salt

Mix together yogurt and soda, set aside for 5-10 minutes.

Combine mashed banana, eggs, milk and yogurt with soda. Add flour and salt, mix well. Add sugar for taste if needed.

Heat a sprayed griddle or frying pan over medium high heat. Pour one heaping tablespoon of batter for each pancake. Cook until pancakes are golden brown on both sides; serve hot.

1 serving  is about 146 calories
