Russian Crepes on Sparkling Water–Blinchiki na Gazirovannoy Vode

It’s a Russian tradition to call yeast crepe – blini, but non-yeast, fast crepes – blinchiki (small blini). Trick, to make lacy crepes – water with bubbles!

Russian Crepes on Sparkling Water–Blinchiki na Gazirovannoy Vode

Yield: 4 servings (2 crepes each)

1 large egg
1 cup milk
1 cup sparkling water (I used Seltzer)
1 cup flour
1 tsp. sugar
pinch of salt

Beat all of the ingredients, except water. Heat a small non-stick pan (I have cast-iron pan for crepes only), spray with cooking spray. Mix batter with sparkling water. Pour 1/3 cup of batter (or enough to cover the bottom of pan) into the center of the pan and swirl to spread evenly. Cook for 30 seconds and flip with spatula, be careful with edges. Cook for another 10 seconds and remove to the plate. Continue until all batter is gone. There is no any oil or butter in batter, so spray pan time to time to prevent sticking.

1 serving  is about 150 calories

    It really dedenps on your taste. Personally, I do not use sauce for the meat-stuffed variety, but would use sour cream or jam/fresh fruit for the cheese or fruit stuffed ones. My mother on the other hand, uses sour cream for these guys.

    I just use left overs from a rotisserie chekicn! I pull the meat off and stick it in a blender and then saute with onions . Makes a great filling, but I wil def try this turkey version! Thanks
