Russians love stewed cabbage with tomato, some add sausages or meat, some – rice or millet, this recipe has it all. Chicken, Cabbage and Rice Stew

Yield: 2 servings

2 cups white cabbage, chopped (about 1/4 of medium cabbage head)
1/2 cup brown or white rice
1/2 medium carrot, chopped
1/2 medium onion, chopped
about 1 lb. chicken thighs or drumsticks with bone, skinless (I used 4 drumsticks)
salt and pepper
2 tbsp. organic tomato paste
bay leaf

Chicken, Cabbage and Rice Stew

Slightly brown chicken thighs or drumsticks, add salt and pepper and cook 10-15 minutes until almost done, remove from pan, set aside, covered.

In same pan add add finely chopped onion and carrots, sauté about 2-3 minutes, add chopped cabbage. If necessary, add some vegetable oil. Cook vegetables in low-medium heat until tender, about 10 minutes.

Add  salt, pepper, bay leaf, tomato paste and uncooked rice. Add 1 cup of water and mix well. Bring to boil, low heat to minimum, cover, and cook about 20 minutes. Let stand covered about 10 minutes, serve hot.

1 serving (2 drumsticks and about 1 cup of rice and cabbage mix) is about 363 calories
