Miroton – Leftover Beef in Onion Gravy with Crispy Top

This is awesome easy recipe: beef in onion gravy under crispy bread top. Really great comfort food. Adapted from RecipeSource.

Yield: 2 servings

1 red onion, finely slice
2 tsp. all-purposed flour
1 tbs. balsamic vinegar
1 cup beef broth
Salt and pepper
6 oz. cooked beef (I used London Broil)
2 rye crackers, crumbled (I used Finn Crisp)

Preheat oven in 400F.

Sauté onion over medium heat in a pan, coated with spray, about 5 minutes. Add flour, mix and cook one about 30 seconds to brown. Add vinegar and broth and cook together until slightly thickened, stirring constantly. Season with salt and pepper.

Pour half onion into baking dish, add sliced meat, second half of onion, sprinkle with crumbs and bake about 10 minutes.
