Chickpeas, Carrot and Tuna Salad

Great for lunches. Can be made ahead. Crunchy and healthy. Very tasty.


Yield: 1 servings

1/4 cup canned chickpeas, rinsed and drained
1 Tuna Cup (2.7 oz.), chunk white tuna in water
1/4 cup carrots, shredded
1/4 red bell pepper, finely sliced
1/3 pickled cucumber, chopped
OR 1-2 tsp. capers
1/2 garlic clove, minced
1 tsp. Dijon mustard with whole grains
3 tsp. freshly squeezed lemon juice
fresh Italian parsley, chopped
salt and pepper
pinch of cumin (optional)

Combine chickpeas, tuna, carrots, red bell pepper, parsley, garlic and pickles or capers, lemon juice and Dijon mustard.  Season to taste with salt and pepper. Add some cumin for taste if you like.

1 serving is about 155 calories
