Miso-Glazed Salmon
Adapted from MyRecipes. Salmon and miso is a wonderful combination. I thought about soba, but made a side dish with buckwheat in Russian style – with mushrooms and onions.

Yield: 2 servings
2 salmon fillet (5 oz. each) (I had wild catch sockeye salmon)
1 tbsp. brown sugar (I used brown sugar mix)
1/2 tbsp. miso (soybean paste) + 1/2 tbsp. hot water (I used Hikari Miso’s Minute Miso)
1 tsp. low-sodium soy sauce
Preheat oven for 400F.
Combine sugar, miso paste, water and soy sauce. Arrange fish in a baking pan, coated with cooking spray. Spoon miso mixture evenly over fish. Bake 12 minutes or until fish flakes.
1 serving is about 305 calories
