Cauliflower Rice

This is a fun and tasty alternative to rice. Chopped cauliflower keeps the structure, has a (nearly) neutral taste and goes well with many dishes and sauces.

Medium head of fresh cauliflower
1/2 medium onion, fine chopped
2-3 cloves garlic, minced
salt and pepper
2-3 tbsp. olive oil

Wash and grate the cauliflower (with grater or in a food processor). Heat oil in pan and sauté garlic and onion 1-2 minutes, add the grated cauliflower and mix well. Flavor with salt and pepper and cook for 4-5 minutes.
