Chipotle Mashed Sweet Potatoes

Chipotle in adobe sauce – a new taste for me. It’s a little bit like prunes taste – smoky, but  really hot. I like my sweet potatoes savory and now like it mashed. Great side dish, will be good for Thanksgiving table. Adapted from Alton Brown’s Chipotle Smashed Sweet Potatoes Recipe.

3 large sweet potatoes, peeled and cubed
2 tbsp. unsalted butter
1 whole canned chipotle pepper in adobo sauce, chopped
1 tsp. adobo sauce from can of peppers
1/2 tsp. salt

Place potato in a saucepan, and cover with water. Bring to a boil. Reduce heat; simmer 15 minutes or until tender.

Drain and return potato to pan. Add butter to potatoes and mash with potato masher. Add peppers, sauce, and salt and continue mashing to combine.

Serve immediately.
