Ginger Lemonade

Great twist for lemonade. I think I’ll try to add honey or mint, but it’s really great just it is.


3 cups water, divided
1/2 cups sugar
2 tbsp. grated peeled fresh ginger
1/2 cups fresh lemon juice

Combine 1 cup water, sugar, and ginger (I add some lemon skins to bitter taste and more fragrant) in a small saucepan; bring to a boil, and cook 1 minute or until sugar dissolves, stirring occasionally. Remove from heat; cool.

Strain ginger mixture through a sieve into a pitcher, and discard solids. Add 2 cups water and lemon juice, and stir well. Serve over ice, and garnish with lemon and lime slices, if desired.
