Buckwheat Flour Yeast Waffles

Soft yeast waffles, great for weekend breakfast. Recipe adapted from cookbook Waffles (Quick & Easy) by Kristiane Muller-Urban.


1 cup milk
1 cup water + 4 tbsp. more
1/4 cup buckwheat flour
1/2 tsp. dry yeast or 1/2 cube fresh yeast
5 tsp. sugar
4 tbsp. butter
2 eggs
3/4 cup all-purpose flour


Heat milk and 1 cup water, pour onto buckwheat flour. Let cool. Stir together yeast, 1 tsp. sugar and 4 tbsp. warm water until the yeast dissolves. Cover and let stand for 15 minutes. Melt butter. Beat together buckwheat mixture, yeast mixture, butter, sugar, pinch of salt, egg and flour. Cover and let stand for 30 minutes.

Bake waffles  in pre-heated waffle iron. Serve with crispy bacon and maple syrup.
