Honey Swiss roll with sour cream filling

Russian love baking with honey. Starting from the famous pryanik (gingerbread) and finishing with high multi-layered cakes. It’s quick and easy roll recipe with a wonderful taste of cake.

3 Eggs
2 tbsp. honey
1/2 cup sugar
3/4 cup cake flour
1 tsp. baking powder  (optional)
1/4 tsp. salt

1 cup sour cream
1/2 cup sugar

Grease and line with waxed paper a 10 x 15 inch jelly roll pan. Mix together flour, baking powder and salt. Beat eggs 1 minute, add sugar and honey gradually. Continue beating 4 minutes until mixture is thick and light colored.  Pour flour into eggs mixture and gently mix. Spread batter in prepared pan. Bake at 350F ~ 10 minutes. Roll together with paper and leave to cool until warm.  Unroll cake, spread with whipped sour cream and sugar.
