Oven Barbecued Chicken Thighs
Easy, rich and tasty sauce. Great with creamy cauliflower puree or mashed potato. Recipe adapted from About.com.

8 chicken thighs
salt, pepper
1 tbsp. vegetable oil
1 clove garlic, crashed
1 yellow onion, sliced
1 cup tomato sauce or ketchup
3 tbsp. brown sugar, packed
1 tbsp. Dijon mustard
1 tbsp. cider vinegar
2 tsp. Worcestershire sauce
Heat oven to 350°F.
Sprinkle the chicken thighs generously with salt and pepper. Heat vegetable oil in a large skillet over medium-high heat. Sear the chicken thighs on both sides until browned; transfer to a plate. Sauté onion and garlic in the same skillet 2-3 minutes, transfer to a baking dish, add chicken thighs on top.
Combine the remaining ingredients in a small bowl. Spoon over the chicken thighs. Cover the skillet tightly with foil and bake for 30 to 40 minutes, or until chicken is tender.
