Tomato, spinach and goat cheese balls salad

I love goat cheese in this salad – creamy and crunchy. This salad is similar to another – Slow-roast Tomatoes, Goat’s Cheese and Mint Salad. But this version is a little bit different.


2 cups baby spinach leaves
4 oz. fresh goat cheese
3-4 grape tomatoes, large
2 tbsps. balsamic vinegar
1 1/2 tbsps. olive oil
Salt and ground black pepper
3-4 tbsp. toasted sesame seeds

Blend olive oil and balsamic vinegar. Thoroughly wash and dry tomatoes and spinach. Toss spinach with most of balsamic vinaigrette, lay bed of spinach on a large serving platter. Cut tomatoes in half each.

Place the soft goat cheese in a bowl and mash with a splash extra-virgin olive oil and season to taste. Roll into bite-sized balls. Chill, covered on a baking sheet until ready to use. Roll in toasted sesame seeds. Add to salad.

Drizzle reserved dressing over plate and serve.
