Funny sweets, the taste is remind fudge. Delicious with hot tea.

1/2 c. mashed potatoes, warmed (homemade, not boxed, no milk or butter added)
1 lb. confectioners sugar
1 tsp. vanilla
1/2 c. peanut butter

Mix warm potatoes with some sifted sugar, it will turn to liquid. Add vanilla. Keep adding powdered sugar until the dough is firm. Roll out and spread with peanut butter. Roll up like a jelly roll and slice.
